Sweet Corn and Chorizo Waffles with Aioli Sauce

Who doesn't like sweet corn? Who doesn't like chorizo? Nobody. That's what I thought. Hence why we smashed these bad boys into a bowl, let them make love and give birth to delicious savory waffle babies.
Just in case that wasn't enough for you. Aioli was in the neighborhood and joined the flavor party.
1Turn on your waffle maker and let it preheat to your preferred settings.
2In a medium bowl, beat the eggs together with the full cream milk.
3In a frying pan on a medium heat, add the olive oil and chorizo (*bacon) then cook until browned. Then set it aside to cool.
4In a large bowl, combine the flour, salt, pepper and baking powder. Add the egg/milk mixture, cooked chorizo (*bacon), melted butter, corn and spring onions and thoroughly stir it together.
5Generously spray your preheated waffle maker with oil and spoon the mixture onto the iron. Allow to cook for around 4 minutes or until golden brown. Repeat with with remaining mixture, remember to re-oil your waffle iron as you go along.
1Mince the garlic gloves together in a small bowl
2Add in all the ingredients for the aioli sauce and mix well.
