Who doesn’t like sweet corn? Who doesn’t like chorizo? Nobody. That’s what I thought. Hence why we smashed these bad boys into a bowl, let them make love and give birth to delicious savory waffle babies.
Just in case that wasn’t enough for you. Aioli was in the neighborhood and joined the flavor party.
2 large eggs½ cup full cream milk
1 tsp baking powder
1¼ cups flour
210g of finely diced chorizo
(Optional) 150g of finely diced bacon
420g drained canned sweetcorn kernels
3 thinly sliced spring onions
2 tbsp melted unsalted butter
salt and pepper
1 tbsp olive oil
3-4 garlic cloves
1 tbsp of olive oil
pinch of pepper
2 tsp of lemon juice
1 Turn on your waffle maker and let it preheat to your preferred settings.
2 In a medium bowl, beat the eggs together with the full cream milk.
3 In a frying pan on a medium heat, add the olive oil and chorizo (*bacon) then cook until browned. Then set it aside to cool.
4 In a large bowl, combine the flour, salt, pepper and baking powder. Add the egg/milk mixture, cooked chorizo (*bacon), melted butter, corn and spring onions and thoroughly stir it together.
5 Generously spray your preheated waffle maker with oil and spoon the mixture onto the iron. Allow to cook for around 4 minutes or until golden brown. Repeat with with remaining mixture, remember to re-oil your waffle iron as you go along.
Mince the garlic gloves together in a small bowl
Add in all the ingredients for the aioli sauce and mix well.
